HEALTHY FAJITAS & RIOJA VEGA, A PERFECT MATCH!

Ingredients et quantities
Pan-fried
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 red onion, chopped
- ⅓ cup (85 ml) chorizo, chopped
- 2 horse (or beef) steaks, cubed
- ¼ cup (60 ml) La Funky des Fit Sauces
Spices
- 2 tbsp (30 ml) paprika
- 1 tbsp (15 ml) chili powder
- 1 tbsp (15 ml) dried oregano
- 2 tsp (10 ml) garlic powder
- 2 tsp (10 ml) onion powder
- 1 tsp (5 ml) ground coriander
- 1 tsp (5 ml) ground cumin
Fajitas
- 8 tortillas
- ¼ white cabbage, finely chopped
- 4 radishes, thinly sliced
- 40 g feta cheese, crumbled
- 2 tbsp (30 ml) fresh coriander, chopped
Sauce
- 1 cup (250 ml) plain Greek yogurt
- 1 lime (zest & juice)
Steps
- Place all spices in a bowl. Stir well to blend spices. Set aside.
- Place red bell pepper, green bell pepper, red onion and chorizo in a saucepan over medium heat. Cook for 5 minutes, stirring regularly.
- Add the horse meat (or beef) and spices to the pot. Continue cooking for a further 3 minutes. At the end of cooking, add La Funky des Fit Sauces to the pot and stir well. Adjust seasoning with salt and pepper, if necessary.
- Place all sauce ingredients in a bowl. Season with salt and pepper and mix well.
- Assemble fajitas with tortillas, cabbage, skillet, feta, cilantro, sauce and radish slices.
Tip
To crisp up the cabbage and radishes, I soaked them in an ice-water bath for 15 minutes. Once drained, the result was amazing!
