HEALTHY ROSÉ SAUCE PASTA BY FIT COOK X COSME PALACIO RIOJA

Ingredients and quantities
Spice mix
- 1 tbsp (15 ml) paprika
- 2 tsp (10 ml) salt
- 2 tsp (10 ml) onion powder
- 2 tsp (10 ml) dried herbs of your choice
- 1 tsp (5 ml) pepper
- 1 tsp (5 ml) dried chili flakes
Sauce
- 2 gray shallots, chopped
- 2 garlic cloves, chopped
- 2 tomatoes, chopped
- ¼ cup (60 ml) store-bought roasted peppers
- 1 tbsp (15 ml) tomato paste
- 2 tbsp (30 ml) Greek yogurt
- 3 tbsp (45 ml) salt-free chicken broth
- 2 tbsp (30 ml) grated Parmesan cheese
Chicken noodles
- 2 chicken breasts (or 325 g)
- 2 portions spaghetti, cooked
- 3 tbsp (45 ml) basil, chopped
Étapes
- Place all the ingredients for the spice mix in a bowl. Mix well and set aside.
- Place chicken on a plate. Add a drizzle of oil and half the spice mixture. Coat well.
- In a skillet over high heat, sprayed with oil, sear the outside of the chicken breasts for 1 minute on each side. Remove from pan and set aside.
- In the same skillet, over medium heat, add shallots, garlic, tomatoes and roasted peppers. Cook for 5 minutes, stirring regularly.
- Add the second half of the spice mix, tomato paste, Greek yogurt and chicken broth to the pan. Bring to a boil, cover, turn heat to low and simmer for 10 minutes. Place in a food processor with the Parmesan cheese and purée until smooth.
- Return sauce to skillet over medium heat and add chicken breasts. Bring to the boil, cover and simmer for 6 minutes or until chicken breasts are cooked. Remove chicken breasts from pan and let stand 5 minutes before slicing.
- Add spaghetti and basil to pan. Mix well to coat.
- Serve spaghetti in sauce with chicken slices, Parmesan cheese and additional basil.
Tip
When you cook your pasta, reserve ¼ cup (60 ml) of pasta cooking water. This starch-rich water will help your sauce coat your pasta in the pan as it finishes cooking!
